Letting Serrano ripen to redness not only makes it eye catching but renders a nice balance of spicy and sweet. It ends up developing more capsaicin and slightly fruitier notes. With flavors similar to tomato, it brings a subtle umami and miso flavor to any dish.
The name Serrano means “from the mountains” because that is where the tend to grow best. Originating from Mexico they are a staple in almost all Mexican plates but also have known to make appearances in Southeast Asian cuisine.
